Just wanted to make sure everyone still remembers about this *poke*
I want everything done & e-mailed to me by December 31st, & if you want to provide a character sheet, I don't have a problem with that ;) (since it'll be a CD portfolio, there's LOADS of room for stuff!)

So, if there's anyone who hasn't decided what recipe they're going to do, or want to do more than one (highly encouraged!) here's some recipes for you to pick through - all I ask is please tell me what recipe you're claiming
I don't want to get 3 pictures all of the same recipe!



Appetizers/Party Food
*Herbed Pita Chips
Makes 128 chips
8 Large pita pockets
1 cup melted butter
1 tsp each: dried oregano, marjoram, basil, & parsley flakes
Seperate pitas into two thin rounds. With scissors, cut rounds into 8 pieces.
In a small bowl, combine butter, oregano, marjoram, basil, & parsley. Brush on pita pieces. Place on baking sheet & bake in 350F oven for 10 minutes.


Soups/Stews
*Hearty Beef Stew
3 tbsp olive or vegetable oil
3 lbs meat cut into cubes
3 tbsp finely chopped green onion
1 clove garlic, minced
3 tbsp flour
1 can beef broth
16 oz tomatoes (canned) or 1 cup peeled & chopped fresh tomato
1½ tsp salt
½ tsp thyme
12 small white onions, peeled
3-4 carrots, cut to 2" sticks (or baby carrots)
12 small new potatoes
1 can peas
2 tbsp chopped parsley
Heat oil in a pot. Brown beef a few pieces at a time & set aside. Remove most oil, then saute garlic & green onion for about 2 minutes - sprinkle with flour, then cook over moderate heat, stirring
Stir in beef broth & tomatoes; bring to a boil, stirring constantly. Add beef, salt, & thyme. Bring to a boil, lower heat & cover. Simmer 1 hour. Skim off any fat, then add onions, carrots, & potato, pushing them down under the liquid. Cover & simmer 45 minutes. Stir in peas, simmer 5-10 minutes. Sprinkle with parsley before serving



Side Dishes
*Potatoes Italiano
4 large baking potatoes
1 tbsp olive or vegetable oil
1/4 cup grated parmesan cheese
1 cup shredded mozzarella cheese
3 medium tomatoes, sliced
1 large onion, thinly sliced
½ tsp oregano
½ tsp salt
1/8 tsp pepper
2 tbsp butter
Peel & slice potatoes in 1/4" slices. Oil a 9x13" casserole dish. Combine cheeses, reserving some for topping. Arrange potatoes, tomatoes, & onion slices in layers, sprinkle each layer with cheese & seasonings, saving about 1/3 cup cheese. Dot with butter & bake uncovered at 400F for 30 minutes. Sprinkle with remaining cheese & bake 20 minutes more


*Potatoes with Onions & herbs
Serves 4
2 pounds potatoes, cut into cubes
1/2 cup butter
1 red onion, sliced into wedges
2 garlic cloves, crushed
1 tsp lemon juice
1 tbsp chopped fresh thyme
1 tbsp chopped fresh oregano
Salt & pepper to taste
Cook the cubed potatoes in a saucepan of boiling water for 10 minutes. Drain thoroughly. Melt the butter in a skillet, & add the red onion wedges, garlic, & lemon juice. Cook for 2-3 minutes, stirring constantly. Add the potatoes & mix well.
Reduce the heat, cover the skillet & cook for 25-30 minutes, stirring ocasionally, until the potatoes are golden & tender
Sprinkle the chopped thyme & oregano over the top of the potatoes & season with salt & pepper to taste.

*Cheese potato crisps
3 tbsp melted margarine
4-5 med potatoes
salt to taste
1½ cups shredded cheese
2 cups crushed rice cereal
Paprika
Brush melted margarine over bottom of jelly-roll pan. Cut potatoes in lengthwise slices, about 1/4" thick. Arrange slices in single layer, turning once to coat both sides with margarine. Sprinkle potatoes with salt, then with cheese. Top with crushed cereal. Sprinkle with paprika. Bake at 375F for about 20 minutes



Drinks:

*Eggnog
4 eggs
4 cups milk
4 tbsp lemon juice
½ cup cream
1/8 tsp nutmeg
1/8 tsp salt
1/3 cup sugar
Beat eggs until thick & lemon coloured. Add sugar, salt, nutmeg, & lemon juice. Add ice-cold milk & cream. Beat with mixer until frothy

*Spiced Tea
1½ cups instant tea
1 cup tang
1 (3 oz) package lemonade mix
2½ cups sugar
1 tsp ground cloves
2 tsp ground cinnamon
Mix all ingredients. Use 2 tsp to 1 cup hot water


*Carribean Champagne - Alcoholic
1 measure white rum
1 measure creme de banane
chilled champagne, to top off
Pour the rum & creme de banane into a chilled champagne flute. Top it off with champagne. Stir gently to mix, & garnish with banana slices (if desired)

*Island Cooler
Serves 1
8-10 ice cubes
2 measures orange juice
1 measure lemon juice
1 measure pineapple juice
1 measure papaya juice
1/2 tsp grenadine
sparkling mineral water to top off
Put 4-6 ice cubes into a cocktail shaker. Pour the fruit juices & the grenadine over the ice. Shake vigorously until a frost forms.
Fill half a glass with ice, & pour the cocktail over them. Top off with sparkling mineral water & stir gently. Garnish with pineapple wedges & cocktail cherries speared on a cocktail stick (if desired)


*Sparkling Peach Melba
1/4 cup frozen raspberries
4 measures peach juice
sparkling mineral water to top off
Rub the raspberries through a wire strainer with the back of a wooden spoon. Transfer the puree to a cocktail shaker
Pour the peach juice into the cocktail shaker & shake vigorously until a frost forms
Strain into a tall chilled tumbler, & top off with sparkling mineral water. Stir gently.


*Cranberry Punch
Serves 10
2 1/2 cups cranberry juice
2 1/2 cups orange juice
2/3 water
1/2 tsp ground ginger
1/4 tsp ground cinnamon
1/4 tsp freshly grated nutmeg
slices of lemon & orange to decorate
Put the cranberry juice, orange juice, water, ginger, cinnamon, & nutmeg in a pan & bring to a boil. Lower the heat & simmer for 5 minutes.
Remove the pan from the heat. Ladle into warmed individual punch glasses or pour into a warmed punch bowl. Decorate with slices of lemon & orange.

*Mocha Slush
Serves 1
4-6 crushed ice cubes
2 measures coffee syrup
1 measure chocolate syrup
4 measures milk
grated chocolate, to decorate
put the crushed ice cubes into a blender & add the coffee syrup, chocolate syrup, & milk. Blend until slushy.
Pour into a chilled goblet & sprinkle with grated chocolate.



Main Course
*Enchilada Casserole
12 corn tortillas
2 lbs hamburger
2 tbsp chili powder
1 med onion, chopped
15 oz can tomato sauce
salt & pepper to taste
1 cup grated cheese
1 can cream of chicken soup
3/4 cup milk
Brown meat, garlic, & onion. Add tomato sauce, chili powder, salt, & pepper. Heat 9x13" pane. Line bottom with 6 tortillas. Add meat mixture on top. Cover with 6 tortillas. Spread chicken soup over & then milk. Cover with cheese & bake at 350F for 25 minutes


Snack-Type Desserts
*Churros
1 cup water
3 oz butter or shortening, diced
2 tbsp brown sugar
pinch of salt
1½ cup all purpose flour, well sifted
1 tsp ground cinnamon, plus extra for dusting
1 tsp vanilla extract
2 eggs
vegetable oil, for deep frying
superfine or icing sugar for dusting
Heat water, butter, brown sugar & salt in a heavy-bottom pan over medium heat until butter has melted
Add flour all at once, cinnamon, & vanilla extract, then remove pan from heat & beat rapidly until the mixture pulls away from the side of hte pan
Let cool slightly, then beat in eggs, 1 at a time, beating well after each addition, until mixture is thick & smooth. Spoon into pastry bag with wide star tip. Heat oil in pan, then pipe mixture into pan. Cook 2 minutes on each side, or until golden brown. Drain on paper towel, dust with sugar & cinnamon, & serve

*Banana Fritters
½ cup milk
2 bananas, mashed
2 cups flour
½ tsp salt
3 tsp baking powder
2 eggs, beaten
1 tsp margarine, melted
vegetable oil for frying
½ cup icing sugar
Combine milk & bananas. Sift in the flour, salt & baking powder. Mix in eggs & margarine.
Heat oil in a large skillet. Cook mixture in spoonfulls, fry until golden brown. Drain on paper towels & dust with icing sugar

*Peppermint Cookies
½ cup shortening
½ cup sugar
1 egg yolk
1½ tsp vanilla
1½ cups sifted flour
½ tsp baking powder
1/4 tsp salt
3 tbsp milk
1 tsp peppermint extract
Cream shortening & sugar. Blend in egg yolk & vanilla. Sift dry ingredients; add alternatively with milk. Add peppermint extract. Mix well, then chill for half an hour.
Roll 1/8 inch thick. Cut into shapes. Bake at 375F for 10 minutes, or until the edges start to brown
